Twilight Pizza Bistro

When you combine ingenious art with American fare you get the delicious wonder that is Twilight Pizza Bistro!

On May 4, 2007, Don and Morgan McColum opened up their first location in downtown Camas, Washington. By 2012 they were opening their second location up on 192nd ave.

While they’ve closed their original location since the early days of their famed business, the newer spot has been going strong for nearly six years. And the customers appreciate the service! Don and Morgan know that having a solid rapport with their clientele is essential in their line of work. Which is why they take the time to have a hands-on relationship with their guests. They’re not just there to say hello to guests, but also they’re to box up a pizza and send them home with a friendly smile.

And it’s not just the couple themselves that have a role at Twilight. Their son just happens to be the head chef. Let me be the first to say that this guy is a genius in the kitchen!

From his signature pizzas, to his creatively mouth-watering salads, to the most delectable tri-tip steak and mushroom bites you will ever have – the man knows what he’s doing!

While their most popular dish may be “The Jester” pizza (which is a hodgepodge of different ingredients including honey), this is just one of many clever creations. Try the Bill Murray pizza, for example. A new take on pizza, it’s one of the most delicious I’ve ever tried! With traditional marinara sauce as its base it’s got meatballs and cheddar cheese as its toppings. Why is it called the Bill Murray? The meatballs.

It doesn’t have to be just pizza though. They have an array of different types of food on their menu, including a variety of signature cocktails. My personal favorite was the Ultraviolet Lemonade.

Something that allows Twilight to stand out above the rest of the American restaurants in town, is they are not a chain. Independently owned, run and with fresh food every day, they take pride in knowing their stuff is the real deal. And that includes their waiters and waitresses. They allow their wait staff to be genuine, friendly and personable – without a script or trying to upsell to the customer.

The restaurant also has some great merchandise of which I was lucky enough to snag before heading out the door! The warmest sweatshirt I’ve possibly ever owned, is now a happy reminder of the delicious meal I had while in Camas on my visit there!
