The only thing that outdoes the pannini at SaBo are their wines!
Whether it’s apperitivo, lunch or a panino on the run you’re looking for, SaBo Salumeria will not disappoint!
The Food
Having opened just recently, SaBo Salumeria is the newest and best addition to Bologna. It’s not just their salamis that will have you amazed – and they are amazing – but so much more.
But since we’re on the subject of food, let’s talk about what they have. From salamis, to cheeses, to prosciutto to grilled vegetables in olive oil, the selection is unlimited.
They offer a long menu full of options including pannini, salads, and of course apperitivo. The ham, salami and cheese platter is something that they are definitely prone to promote, as it is eye-catching and plentiful. Obviously I had to try it. And since I was already there, I took the liberty of trying a few of their pannini as well. Just for you, though.
The Shop

With limited seating, approximately only 8 seats and 4 tables, the little hole-in-the-wall has its charm spread out evenly throughout the establishment. Order a panino off the menu if you like, or create your own. The salumist is at your disposal whether it’s to prepare some cured meats, dice up some of their specialty cheeses or tell you about any of their innumerable items in the display case.

The Wine is a Must
And while it’s the food you may think you’re coming in for, it’s actually the wine. This place has some of the best wines I had a chance to taste while in the city. I had the opportunity to taste three, and all of them were outstanding. Need help understanding where the wines are from and what their aromas are like? No problem at all. Their staff is available to inform and educate you on all of their wines and serve them to you in the most professional friendly way.

The salumist, Bart and I. Get it? Bart and Lisa.

If it’s not the food or the wine you’re interested in, perhaps you just want the real Italian experience. This is the place to come. With no tourists in sight, you will feel right in the middle of the Italian lifestyle when you pop into this tiny joint. The staff could not be more professional or kind, making you feel at home from the time you walk in until you leave. The ambiance caters primarily to locals, but is open to everyone. With such a long and positive list of reasons why you should check this place out, you probably should. And when you do, make sure to tell them Lisa sent you!
